Oatmeal Cookies

Oatmeal cookies, a.k.a. “Ovsyanoe pechenie,” have been among the most popular treats in all over the world for many decades. Typically served with warm milk or enjoyed with black tea, sometimes with butter.

 

Ingredients

  • 1¼ cups whole grain wheat flour
  • 1 cup whole grain sprouted rolled oats
  • 30 g raisins (optional) - soaked in water for 15 minutes
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon baking soda
  • 1/3 teaspoon salt
  • 1/2 cup (50 g) coconut sugar
  • 1/3 cup (85 g) butter, melted
  • 1/3 cup filtered water
  • Whey chocolate/vanila protein - 1 scoop (optional)

Instructions

  1. Place in a blender bowl: wheat flour, oats, raisins (half amount), cinnamon,        baking soda and salt. Process until uniform.
  2. Cream the butter and sugar about 1-2 minutes.
  3. Add creamed butter with remaining raisins into flour mix and slowly adding water mixing until dough comes together.
  4. Transfer to floured surface, gently turn into a ball. Wrap dough in food plastic  and place in refrigerator for an hour
  5.  Roll the dough out to 1/4-inch thickness and cut with a 2-inch round cookie cutter, or pinch off about 50 g of dough and shape it into a disc with your hands.

6.     Bake in a preheated oven at 380 °F (193 °C) for 15 minutes. Allow the cookies to cool completely. The cookies will be soft when first out of the oven, but firm up quickly.

7.     Serve with warm milk, tea/coffee or any favorite drink and enjoy!
